Hawaiian Chicken over Rice

I made this recipe a while back, maybe a month ago. And I’m not sure why I haven’t posted it yet. I guess I just forgot, and I apologize!

Because the only word I can use to describe this is YUM! And maybe the word easy would work too. :)

This recipe was inspired by one from Six Sisters’ Stuff

4 chicken breasts
1/2 cup bbq sauce
1/2 cup teriyaki sauce
1/2 cup water
12 oz can pineapple

1. Put chicken breasts, bbq sauce, teriyaki, water and pineapple into the crock pot.
2. Cook on low for about 5-6 hours or on high for about 3, until chicken is cooked thoroughly and shreddable.
3. Shred chicken and return to the crock pot while you cook the rice.
4. Cook rice according to package directions in a pot, or with a rice cooker.
5. Serve rice topped with chicken mixture and lots of sauce.

  2. I tried this recipe instead of the gravied chicken I usually make for Hawaiian haystacks. So good! I did it in a pressure cooker instead of slow cooking, because I forgot to put it in early enough. It worked. I also used only 3 breasts for a little saucier result (and because I had frozen the breasts in packages of 3). This recipe is definitely a keeper. Easy & tasty, and fits perfectly into our Sunday night rice bowls. Thanks!

  5. I am making this right now, but the sauce is very watery. The sauce looks thicker in your photo… I don't know what I did wrong? Was I supposed to pour out the water from the canned pineapples? Because I included most of it. My son taste-tested it before it's done and he gave it a thumbs-up, but, I wanted the thicker consistency that appears in the photo. Any ideas?

  6. @Cheryl! I'm sorry the sauce turned out so runny for you… I hope it still tasted good enough to eat? I remember not putting all of the pineapple juice in, but I'm not sure exactly how much. I think I probably only put about 1/2 the amount of juice. I think you could also leave the water out to get it thicker. Lastly, try leaving the lid of for the last little bit of cooking (although the lid keeps more heat in, it also keeps in moisture.) Let me know if these help :)

    Yum, yum, yum, yum, yum! This tasted great and fit in to my “Minimal Effort, Maximum Taste” guidelines. My husband loved it (even if I neglected to tell him those chunks were pineapple and not potato…whooops). I will definitely be making this again and I think I’ll add some green onions (because I love them). :)
