Artichoke Salad

Do you like easy?

Do you like quick?

Do you like simple?

This salad has all those elements in it, along with just 5 basic ingredients and fresh tasting too. My inspiration for this salad is:

I have recently discovered that artichoke hearts have very few calories in them along with being quite tasty.  A friend of mine mentioned to me that she likes to throw mint into her salads which I have never tried before.  And I was reading my mother-in-law’s Sunset Magazine.  Put all those together and this salad was created.

Ingredients:

1 head romaine lettuce (torn or cut into bite size)

5 to 7 sprigs fresh mint (chopped into bite size)

Parmesan cheese (grated) about 1/4 cup

12 to 15 bottled artichoke hearts (drained, rinsed, and chopped into bite size)

1/2 lemon

sea salt and ground pepper to taste

Directions:

1. Prepare the first 4 ingredients and put into a salad bowl.

2. Squeeze juice from the lemon over salad.

3. Sprinkle salt and pepper over the salad.

4. Toss and serve.
