I think everyone likes the holiday season for different reasons. Of course we like spending time with family, giving and receiving presents, thinking of Christ, and probably many more wonderful things. But one thing I really love about this season is giving out treats to the neighbors. I still haven’t found something that is “mine”, something that I want to make every year. But for now its a good excuse for me to make sweets, and this way I don’t have to eat them all too.
This year, thanks to white lights on wednesday, I participated in a virtual cookie swap. For me, this seemed much more reasonable than paying to ship a box of cookies somewhere, and not knowing if your box of treats would actually arrive. Instead I just sent one of my favorite cookie recipes away in the mail, and I received a recipe in the mail as well. I got my recipe from grandma loy’s kitchen.
She called these “chewy butterscotch brownies” but without some chocolate/cocoa powder its hard for me to call something a brownie. So, maybe they’re more like blondies. But I’ll just call them bars. Ha!
The nice thing about this recipe is you can change it to make it your own. Of course if you aren’t a fan of butterscotch you won’t be a fan of this version, but instead you can use chocolate chips, mint chips, peanut butter chips, etc. Plus instead of pecans, you can add peanuts, walnuts, etc.
So, here we go. I decided to stick with the original recipe this time, but I’ll let you know if I make any adaptations to it later. I accidentally messed up one step, but it turned out great, so I’ll tell you how I did it anyway.
Butterscotch Bars
3/4 cup butter, softened and divided
1 1/2 cups brown sugar
1 cup coconut flakes
3/4 cup butterscotch chips
1 3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
1 egg
1 cup miniature marshmallows
1/2 cup chopped pecans
1. In a medium sauce pan, melt 1/4 cup butter over medium heat.
2. Add 1 and 1/2 cup brown sugar, the coconut and the butterscotch pieces to the butter. And stir for a few minutes.
3. Spread about 1/3 of the mixture into the bottom of a sprayed 9×13 pan.
4. In a large mixing bowl, combine the rest of the buttersotch mixture, 1/2 cup butter, flour, baking soda, salt, and egg. Mix well.
5. Fold in marshmallows and pecans.
6. Spoon dough over the buttersotch mixture. Spread it out evenly.
7. Bake at 350 degrees for about 25 minutes.
8. When down baking, drizzle butterscotch glaze over the top.
9. Cut into bars and enjoy.
Butterscotch Glaze
1 TBS butter
1 TBS light corn syrup
1/4 cup butterscotch chips
2 cups powdered sugar
2-3 TBS milk
1. Melt the butter, corn syrup and butterscotch chips over low heat, stirring constantly till melted.
2. Remove from heat and add powdered sugar, and milk until consistency of a glaze.
3. Pour over the top of the butterscotch bars.
Ps. I might actually leave the pecans out next time, I just thought it was a weird combination. Not too strong of a flavor, but I didn’t need the texture change cause there wasn’t enough of it.
