Neapolitan Pancakes
Here I am (Aimee) reposting a delicious recipe that my mom posted over 2 years ago. When we first started this blog we were just posting recipes we liked, mostly for each other as I don’t think we had anyone else reading. At that point we weren’t taking any pictures of our recipes. Even when I started taking pictures of the food I made, the pictures were pretty awful. I like to think that I have improved greatly since then, thanks to a LOT of practice, and a few good camera tools (first a better camera – I shoot with the Nikon D5100. I use a 35 mm lens and if I can’t get good natural light I use our external flash aimed at the ceiling to bounce off).
These pancakes are really delicious, but so simple since the recipe is just a few extra ingredients added to a store bought traditional pancake mix.
You take your pancake mix and add in milk (instead of water that some add), an egg, a couple drops of vanilla extract, strawberries and chocolate chips. So you have your vanilla, strawberry and chocolate flavors just like you would get in a Neapolitan ice cream. The flavors come together perfect to make a perfect pancake. You can top your pancakes with traditional syrup (which is what we did) or a little chocolate syrup to get an even stronger chocolate flavor.
