Soup season is coming. Fall and winter are the best soup season because its cold outside and I want to eat something warm. That feeling of coming inside from the cold and seeing a big pot of soup on the stove, or crock pot in this case. And then taking a swallow of the soup and feeling it as it warms your throat and whole body! Ahh. I love that.
Well, as soup season comes on, I hope we will be posting more soup recipes, and to start the season of right, this is a delicious Beef Enchilada Soup. Its easy, only about 3 steps and cooked in the crock pot all day. So it’ll make your house smell delicious.
Beef Enchilada Soup
1 pound ground beef
1/2 onion, chopped
1 can diced tomatoes
1 can cream of chicken soup
1 can enchilada sauce
1 can black beans
1 can corn
1 TBS taco seasoning
1. Brown ground beef and onion in a saute pan over medium heat, until beef is browned and onion is a little soft.
2. Pour all ingredients into the crockpot. Stir together.
3. Cook on low for 7-8 hours, or on high for 4-5 hours.
Enjoy this soup topped with sour cream and eaten with chips!
