Fresh never tasted better with this simple and easy pomegranate citrus salad.
This pomegranate citrus salad has to be one of the easiest and fresh salads I have every put together. And I am all about easy. Sometimes I share a complicated recipe for when you are wanting something special or have extra time. But not with this pomegranate citrus salad it comes together in the matter of minutes, especially if you are using premixed lettuce and prepared pomegranate arils. Now just in case you have a whole pomegranate to seed, I have a couple of tips for you.
I really didn’t know what to do with a pomegranate before now. I recall eating one once when I was growing up in Idaho. It was tasty but messy, really messy; stain your fingers, hands, and face messy with a bright red coloring. Since I have discovered how to gather those arils without making the huge mess. The secret; cut the pomegranate in half crosswise, submerge it in a large bowl of water, pull the skin and membranes back to loosen the seeds. They will mostly pop out, but some you will need to pry to loosen their hold. Then strain and gather the seeds. The arils do not loose any of their crunchiness or flavor using this method and it works. It does take a little time but not too much, just plan your menu for that additional 5 to 10 minutes. The rest of the salad comes together quite quickly.
Now that you have your pomegranate arils, let’s put the salad together. Set out your plates, toss a couple of handfuls of spring mix on top. Next sprinkle the diced red onion, place the tangerine sections, and top with the pomegranate arils. I spray a little bit of olive oil over the whole salad, it adds a bit of flavor but really let’s all that delicious freshness of your ingredients really delight your taste buds in the pomegranate citrus salad.
Add a couple of slices of French bread and you have a whole lunch meal or serve as a side salad to dinner. Either way, you will be happy for eating so healthy with your pomegranate citrus salad.
Pomegranate Citrus Salad
Ingredients
- 2 tangerines (peeled and sectioned)
- 1/2 cup pomegranate seeds
- 2 cups spinach or spring mix
- 1/4 cup red onion (diced)
- 1 tsp olive oil
Instructions
- Layer the spinach or spring mix on your serving plate
- Spread your tangerine sections all over the spinach
- Sprinkle your red onions on top of the tangerine
- Sprinkle your pomegranate seeds all over the salad
- Spray lightly with your olive oil
Enjoy this sweet and citrus salad that makes the perfect amount for 2 (adjust amounts if you are serving more people).
