Pineapple Guava Apple Crumb Pie

A few Saturday nights ago at our church we had an activity, it was named Ugly Sweater and Tie Pie Night (try to say that fast 3 times).  I was debating what pie to take and choose a creation of apples and pineapple guavas with a crumb topping.

pineapple guava apple crumb pie If you are making a fruit pie it needs time to set, at least 2 hours or so, if not you find yourself slicing into a runny mess fruit pie. Not that I have ever made that mistake  ; ). Just saying so plan a day when you have time to make this pie in the morning for an evening dinner or even better make the pie the day before (Craig and I discovered the flavors intensified and blended to make the pie even more delicious after a day.)

Pineapple Guava Apple Crumb Pie

1 pie crust (you can use your favorite homemade recipe or Pillsbury rolled pie crust which is what I do)

Pineapple Guava Filling:
10 small pineapple guavas (peeled and chopped roughly)
1/2 cup water
1/8 tsp. nutmeg
1/8 tsp. cardamon
1/2 tsp. cinnamon
1/4 cup brown sugar
1/4 cup white sugar

Apple Filling Ingredients:
1 quart bottle sliced apples (drained)
2 Tbs. flour
1/4 cup brown sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cardamon

(If you choose you can use fresh apples – peel, core, and slice thin)

Crumb Topping Ingredients:
1/2 cup flour
1/2 cup oatmeal (not instant)
1/4 cup brown sugar
1/2 tsp. cinnamon
4 to 6 Tbs butter (softened to room temperature)

1. Lightly flour your pie pan and roll out your pie crust and place in pie pan.  If you want to get fancy you could crimp your edges with one of these pretty edges.

Pineapple Guava Compote Directions

1. Put all the Pineapple Guava ingredients into a small saucepan.
2. Stir and simmer for about 10 minutes until the sugars are melted and the guava is soft.
3. Remove from heat and strain through a sieve so you have the gooey fruit spice mixture left and not the watery sauce.

Apple Filling Directions:

1. Put your prepared apples (fresh or canned) into a large bowl.
2. Add the flour and spices and stir in gently.

Crumb Topping Directions:

1. Shift flour into a medium bowl.
2. Add in oatmeal, brown sugar, and cinnamon, mix until well incorporated.
3. Add butter, using a fork to break into the flour/oatmeal mixture.  You may have to use your fingers to get it all mixed in crumbly like.

Pie Assembly and Cooking Directions:

1. Preheat your oven to 425 degrees.
2. Place pie crust into lightly floured pie pan and crimp edges. I used a 9 ” pie pan.
3. Add apple layer and spread to fill bottom of pie pan.
4. Layer with pineapple guava and spread over the top of the apples.
5. Sprinkle the top with the crumb topping mixture over the entire top of the pie.
6. Place on a cookie sheet to catch any apple drippings that may or may not spill over.
7. Cover the crumb topping with foil and bake for 20 to 25 minutes.
8. Remove the foil and bake for another 20 to 25 minutes until both crust and crumb topping are done.
9. Remove pie from oven and let cool for 2 hours before slicing into it.

Enjoy this sweet pie on its own or topped with vanilla ice cream!
