Fun fact, that I’ve shared once before – I am from Fallbrook, California, which claims itself to be the Avocado Capitol of the World. I love avocados, but until recently I’d only eaten them in savory foods – guacamole, tacos, salads, etc. But I headed to the store and grabbed some Hass avocados and decided to make a dessert with them. Avocados in dessert, you ask? Why yes – avocados can be used in many types of recipes from the few I mentioned, to soups, to smoothies. And I made a chocolate avocado pudding!
Another good reason to love avocados is how good they are for you. Avocados contain naturally good fats, which are an important part of a healthy diet. They are cholesterol and sodium free. They are dense in nutrients too. And I actually love just cutting an avocado open, slicing it up and sprinkling it with just a dash of salt for a great snack. So back to my chocolate avocado pudding. The chocolate in this pudding is really pretty dark, I prefer something a little lighter, but I topped mine with some fruit and that helped sweeten it up a little for me and make it more enjoyable for me, but it was still perfect for my chocolate and sweet tooth fix. Chocolate Avocado Pudidng
Ingredients
- 2 ripe avocados
- 1 cup almond milk
- 1/3 cup unsweetened cocoa powder
- 1/2 cup honey
- 2 tsp vanilla
- 1/4 tsp cinnamon
- 1/8 tsp salt
- strawberries (for garnish)
Instructions
- Cut your avocados in half and scoop out the seed and scoop the avocado into your blender.
- Put your almond milk, cocoa powder, honey, vanilla, cinnamon and salt in your blender and mix on high for about 1 minute until everything is smooth and creamy.
- Transfer the pudding to glasses or ramekins and chill in the fridge for 3 hours.
- Top with strawberries and serve immediately.
