I’ve said it before and I’ll say it again, having a baby totally changes your life. In way more good ways than bad, for sure, but that doesn’t mean it’s not different. And one main difference for us is that our date nights are often parties of 3 now instead of 2. Colby man gets to tag along with mom and dad when we want to eat dinner out, and our movies end up being rented from red box and watched at home after Colby has gone to sleep. That means that most likely this weekend, Valentines day will most likely be spent at home too. But I don’t mind too much, because now I have a date with my handsome husband and with my adorable little boyfriend.
So this year for our Valentine’s Day dinner at home I’m going to make sure we have dinner that’s delicious and a little bit fancy, and our first course or a side is going to be this amazing apple pecan salad. And it’ll be the perfect addition to our semi fancy date night dinner at home.

This salad would be a perfect side dish to any of your favorite meals! Or if you add chicken it would be a great meal on its own too!
Apple Pecan Salad
Ingredients
- 8 cups salad greens (I used a little spring mix, romaine and spinach)
- 1 cup red apple (diced)
- 1 cup pecans (chopped)
- 1/2 cup crumbled feta cheese
- 1/2 cup dried cranberries
- your choice of dressing
Instructions
- Prepare your ingredients, rinse your lettuce and spinach, cut up your apple and pecans.
- Mix together your salad greens, apple, pecans, cheese, and cranberries in a large bowl.
- Serve with your favorite salad dressing.

We always do Valentines day at home. Dax has become our permanent third wheel but we love it. The older he gets the easier it is for us to sneak away, but celebrating cheesy holidays is way more fun with him and his cute little reactions.
