Barbecue chicken lettuce wraps are easy to make and packed full of flavor, stuffed full of bbq chicken, corn, black beans, and bell peppers these are perfect for lunch or dinner!

These lettuce wraps are packed full of flavor and even my 3 year old loves them. Okay, he won’t eat the lettuce part, but he loves the filling stuffed in a tortilla or just on its own.
I recently tried out Smith’s Click List and it was awesome! I got everything I needed for some of my favorite meals, including these barbecue chicken lettuce wraps and my Italian meatballs and I didn’t even have to get out of my car!
For these, you’ll need chicken breasts, canned corn, canned black beans, bbq sauce, bell peppers and cilantro (optional, garnish). I used Simple Truth Organic products, which are all natural, organic and delicious!
So, I’m obsessed with Smith’s Click List Grocery Store pick up! Its so nice because of a few reasons, the biggest being that I don’t even have to get out of the car to get my groceries – that means both me and my kids can wear pajamas to the store and I don’t have to drag my boys around the store and figure out how to keep my oldest from asking for every single treat, and toy, and soda bottle that he sees.
Also, because I can add to my list throughout the week when I remember groceries that we are out of and need to buy, that way I’m not getting to the store and forgetting half of things I wanted to buy. And lastly it saves me money because I can just get the groceries that I actually need instead of grabbing a few snacks and treats along the way just because they look so good right now! 😉
Also, their substitution policy for things you order is so great. If you order something and they don’t have it, say a thing of yogurt, if they don’t have it but they have a bigger size they’ll give you the bigger size but only charge you for the smaller size that you originally ordered. OR, if they end up subbing something and giving you the Kroger branded product they won’t charge you for it all!
These lettuce wraps are perfect for lunch or dinner. In fact since there are only 3 of us (that eat real food) here at home, I made a bunch of the chicken up and enough for 1 dinner and 2 lunches throughout the week. YUM!
Barbecue Chicken Lettuce Wraps
Ingredients
- 3-4 large chicken breasts
- 1/2 cup bbq sauce
- salt and pepper
- 1 14 oz can black beans drained and rinsed
- 1 14 oz can corn drained and rinsed
- 1 large bell pepper diced
- 2 TBS cilantro chopped
- 1 head butter lettuce
Instructions
- Coat all of the chicken breasts in about 2 TBS of bbq sauce and sprinkle with salt and pepper.
- Cook on your a grill over medium heat for about 10 minutes, flipping halfway until cooked throughout (or cook in a saute pan or in the oven) and internal temperature is 165 degrees.
- Dice chicken into bite sized cubes. Coat chicken in a small bowl with remaining bbq sauce.
- Spoon about 1 TBS black beans, 1 TBS corn into a lettuce leaf.
- Spread 2-3 TBS of chicken on top.
- Sprinkle with bell pepper pieces and cilantro and serve.
