Having recently used coconut milk in another recipe, I think you would be able to enjoy the flavor of coconut and not the texture. I don’t know if the coconut adds much in dry ingredients so be aware that you might need to add less liquid. Play it by ear, you such expect a normal muffin batter. Good luck.
