This chicken cranberry sunflower salad is full of all things good, and is a perfect way to stick to your new years resolutions (or to eat year round, because lets be honest, its delicious!) Its full of so many delicious ingredients and has so much flavor when they all come together.
I love a loaded salad that, of course, has lettuce, but is full of so many other good ingredients its not like you’re eating a big plate of leafy greens and this salad is just that. Its packed full of sweet dried cranberries, salty sunflower seeds, shredded mozzarella cheese, tangy red onion, and chicken all covered in a luscious poppy seed dressing! The flavor combination is just to die for!
This salad is can be a full meal, since it has so many amazing ingredients, its great for lunch or a lighter dinner. Or a side salad served with your dinner too.
Its so quick and easy to throw all the ingredients for the salad together. Grab some Ocean Spray Craisins® Dried Cranberries from Sam’s Club (which, let me just tell you are one of my favorite snacks!**)
You’ll also need some sunflower kernels, mozzarella cheese (you can buy it preshredded, or in a block and shred it yourself), and a red onion that you’ll slice up. Cook up some chicken in your slow cooker, (or boil it on the stove top) and shred it all up – or for an even tastier and no hassle chicken use a rotisserie chicken which you can grab at your local Sam’s Club too. Top it all with a homemade poppyseed dressing, or grab your favorite from the store for good measure.

Chicken Cranberry Sunflower Salad
Ingredients
- 8 cups spring mix
- 2 cups cooked and shredded chicken (seasoned lightly with a little salt and pepper)
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced red onion
- 1/2 cup sunflower kernels
- 1/2 cup Ocean Spray Craisins® Dried Cranberries
- 1-2 cups poppyseed dressing
Instructions
- Toss together your spring mix, chicken, mozzarella, onion, sunflower kernels, and dried cranberries.
- Top with your poppyseed dressing and mix together, or allow individuals to top salad with dressing individually.
**I love grabbing a small handful of Ocean Spray® Craisins® to snack on alone. Or pairing them with a handful of nuts, like pistachios, macadamia nuts or almonds – with a couple white chocolate chips thrown in for good measure. Aimee, I had cancer surgery last December and my stomach died, I have a gtube that I put liquid formula in for nutrition. Ask your Mom, she probably can tell you more. I am hoping for an operation in the next couple of months so I can eat again.
