Ahhhh……………. the lazy days of summer, so beautiful, so peaceful, so restful. Whoa, whoa, whoa! – where are those? I love summer but my life is super crazy at the moment; I am running here and there exercising, to work, and then to class. I am in the midst of ESL Observation Classes to finish off my TESOL Certification. And that makes my life crazy but Tyson Grilled & Ready Chicken Fillets along with Birds Eye Protein Blends California Style has made it so I can still eat a healthy, delicious meal with these grilled chicken lettuce wraps.
I just ran to my neighborhood Walmart, grabbed the Tyson Grilled & Ready Chicken Fillets in the freezer aisle, picked up the Birds Eye Protein Blend Vegetables around the corner with the frozen vegetables and was ready to prepare an effortless, easy, healthy, protein filled meal for Craig and I. I loved the protein in the vegetable blend too because that is what gives me the long lasting energy to keep me on the run and not run out of steam.
These grilled chicken lettuce wraps are super easy, super quick, and ready to eat even on the run if you need to. There are only 4 ingredients, and 4 steps. First – you microwave your Tyson Grilled & Ready Chicken Fillets and slice, second – microwave your Birds Eye Protein Blends California Style Vegetables, third – layer the chicken, the protein blend vegetables, peanut sauce in your romaine lettuce leafs, and finally fourth – eat! Quick, effortless, no hot oven or stove to slave over, and delicious, healthy food to enjoy eating.
Grilled Chicken Lettuce Wraps
- 3 Tyson Grilled & Ready Chicken Fillets
- 1 pkg Birds Eye Protein Blend California Style Vegetables
- 4 romaine lettuce leaves
- 1/2 cup peanut sauce
- Wash and dry the romaine lettuce leaves
- Microwave the chicken fillets according to package directions
- Slice each fillet into 3 pieces
- Microwave the vegetables according to package directions
- Layer romaine lettuce leaf with 2 to 3 slices of the chicken fillet
- Spoon 2 to 3 TBS of the vegetables over the chicken slices
- Drizzle peanut sauce over the top
- Repeat for all the lettuce leaves
- Wrap lettuce leaf around the chicken and vegetables and eat
