These pancakes are the perfect solution for breakfast in the morning, or brinner at night. They’re fluffy, thick, soft and delicious. Great topped with any of your favorite toppings!

I grew up eating pancakes from a mix like bisquick or krusteaz, and although those can be great from time to time, these are my go to pancakes! When I have just a couple extra minutes to make breakfast in the morning, I make these.
These pancakes are delicious, they’re thick, and fluffy and perfect. They’re easy to make, and only take a few minutes of prep. They’re great with any of your favorite pancake toppings, syrup, fresh fruit, whipped cream, peanut butter, etc. I’ve used these to make banana pancakes, peach pie pancakes, chocolate chip pancakes and more!
Perfect Pancakes
Ingredients
- 1 TBS vinegar
- 1 cup milk
- 1 1/4 cup flour
- 2 TBS sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 2 TBS butter (melted)
Equipment
- Large Mixing Bowl
Instructions
- Preheat a large griddle to medium high heat.
- Combine milk with vinegar in a medium sized bowl. Set aside for about 5 minutes (Or you can use buttermilk).
- Put sugar, baking powder, baking soda and salt in a large mixing bowl.
- Sift flour into large mixing bowl with other dry ingredients.
- Add the butter and egg into the bowl with the “sour” milk.
- Pour the wet mixture into the dry mixture and stir together, just until the lumps are gone.
- Spray skillet with non stick cooking spray.
- Pour pancake batter onto skillet in 1/4 cupfuls.
- Cook pancakes until bubbles begin to appear on the surface.
- Flip with a spatula and cook for another 1-2 minutes until golden on the bottom side too.

These are the best pancakes! I’ve been making them for almost 5 years now for my fiancé. He loves pancakes and these are his favorite. I actually got rid of all my other pancake recipes so I don’t make them by mistake,lol. Just wondering if you ever froze these and if so how you recommend reheating them? We do not use the microwave and was wondering if you think the toaster would work.

Kimberly!! You just made my day, I’m so glad you love these as much as we do! I haven’t tried freezing these yet, but I freeze french toast and waffles all the time, so I think they should work fine. I always reheat those in the toaster, so I’d do the same for the pancakes. The edges might get a little more crispy, but that sounds yummy to me! Let me know if you try it!

I’ve made these twice in the past 4 days, we absolutely love them, and think this is the best pancake recipe we’ve made. It’s so simple yet delicious. These are amazing! For those lookin for a healthy approach I used Bob’s Red Mill Whole Grain Pancake Mix, and I subbed lemon juice for vinegar, almond milk for dairy milk, and Truvia Baking Blend for sugar! thanks for a great recipe!

Hi, just found your lovely blog, and this recipe for pancakes. It is Pancake Day here in the UK tomorrow (Shrove Tuesday) and I have been thinking about trying a slightly different take on the traditional English pancake. I shall be making these up tomorrow for dinner – my husband likes to indulge in just having sweet pancakes on this day and nothing else in keeping with the tradition of eating up the surplus before fasting. Interesting, my batter was very watery and the pancakes came out very thin but DELICIOUS – almost crepe like. Strange that the other commenter had thick batter. I did not add the vinegar. Loved them though and I will 100% be making them again, thank you!

Yeah I think we all probably measure our flour differently. Some people sift it, some people scoop it by spoonful into the measuring cup, some pack it down. I would suggest just adding more until you get the texture you like for your batter next time. But glad you still liked the pancakes!

I just made these and I have to say they were SOOOO heavy and the batter was terribly thick..i had to add about 1/2c more milk…cooking up right now, i sure hope they taste good :s

Sorry the batter was thick for you. I wonder if your flour is less airy than mine. Its not supposed to be a runny batter though by any means. Hope it turned out for you with the extra milk!

My husband and I are vegans and used this recipe and replaced it with bob red mills egg replacer, earth balance butter, and almond milk and they came out SO PERFECT!!! Thanks for the recipe!!!

I made these this morning! Oh my goodness they are insanely good! I will never make another recipe again – they were perfect! I made homemade ricotta cheese the other day and had left over whey liquid, so I used that instead of the vinegar & milk. I also added banana’s in them. Soo great – Thank you thank you : )
