This is a lovely recipe, and I'm so happy I found it! We have six 5-year-old pineapple guava trees, so the fruit is still on the small side but there is plenty of it. I didn't know what else to do with the fruit other than eat it on its own, so finding your recipe was perfect timing for our fall harvest! I veganized it by using a "flax egg" and I also substituted monk fruit for the sugar in the loaf. We discovered it was delicious spread with peanut butter after baking, so today I'm making it with a peanut butter swirl inside. Thank you!
