It&rsquo;s perfect for a rainy day when the skies are gray, but of course it&rsquo;d be delicious on a warm day too. Plus cooking it in the slow cooker, you don&rsquo;t have to worry about heating up your kitchen. </p>



<p class="wp-block-paragraph">This Beef Stew is super customizable, and you can leave out the veggies you don&rsquo;t like, and add extras that you do. Try adding in some mushrooms, peppers, or peas, leave out the celery or onions. This is my favorite classic veggie combination, and with these seasonings you can&rsquo;t go wrong. </p>

<p class="wp-block-paragraph"><strong>Step 1: Sear the Beef. </strong>Sprinkle the beef pieces with salt and pepper. Add olive oil to a large skillet and heat over medium high. Add in the beef pieces and brown each side of the beef to give them a nice sear. Transfer them to the slow cooker. </p>

<p class="wp-block-paragraph"><strong>Step 2: Cook the Onion. </strong>Add in the onion to the hot pan, and cook for a few minutes, then add the minced garlic and cook for about 30 seconds.</p>

<p class="wp-block-paragraph"><strong>Step 3: Add everything to the slow cooker. </strong>Add the potatoes, celery, carrots, tomato paste, beef bouillon, Worcestershire sauce, rosemary, thyme, and additional salt and pepper. Pour the beef broth over the top, and top with the bay leaves. <strong>Cook on low. </strong>Cook the stew for 7 to 8 hours on low, or until the beef and vegetables are tender.</p>

<p class="wp-block-paragraph">Store any leftover stew in an airtight container in the fridge for up to 4 days. The flavor will get even better as it sits in the refrigerator. </p>



<p class="wp-block-paragraph">You can also freeze the beef stew. Once cooled, transfer the freezer safe container or bag and freeze for up to 3 months. Thaw it in the refrigerator overnight before reheating in a pot on the stove until warm.</p>
