Do you have tomatoes growing in your garden? One of the sweetest treats is a fresh cherry tomato just picked and popped into your mouth. The sweet juices squirting and filling your taste buds with absolute deliciousness. I can eat cherry tomatoes like candy, sometimes it is just hard to stop. I love a fresh tomato sliced and sprinkled with a little salt, it is a true delight to me. My garden will always have a tomato plant or two growing. I just can’t help myself.
I discovered this little, simple recipe in Martha Stewart Living July/August 2013 issue. It called for heirloom tomatoes and although I know they would be fantastic, I just used my basic tomato. I am not even sure what kind; possibly Early Girl or Better Boy – whatever my Home Depot had to offer.
Ingredients:
1 large ripe tomato (sliced
a handful of cherry tomatoes (cut in half)
a handful of fresh blueberries
2 or 3 sprigs of fresh mint leaves (cut or torn into bite size pieces)
1 Tbs. balsamic vinegar
Directions:
1. Place your sliced tomatoes on your plate
2. Scatter your cherry tomatoes and blueberries over the sliced tomatoes
3. Sprinkle the mint leaves over the top of those
4. Drizzle the balsamic vinegar over all the ingredients
Enjoy this tomato salad for a refreshing lunch!
