When I think of a summer I always picture a juicy watermelon. Watermelon means summer, summer is beautiful and green and we get all rosy being out in the sun. Watermelon are delicious just picked from the vine and warmed by the sun with all that sweet watermelon juice dripping on you. Or watermelon are refreshing sweet, cooled in a stream or your fridge just waiting for you to bite into them for a burst of deliciousness.
I don’t think we can get enough watermelon. And luckily for us here in Sicily they are sold on almost every street corner which makes it so easy to pick up a watermelon. I just might buy all the watermelons so I can make pitchers and pitchers of watermelon mint splash drinks. It is so quick and easy too.
Only 5 ingredients are required: watermelon, cold water, simple syrup*, lemon juice, and fresh mint leaves. You will want to remove all seeds and the rind from your watermelon but it isn’t necessary to cube or make into small pieces. The watermelon will blend right together with all the other ingredients in a jiffy with your blender. You don’t even need a high power blend if you don’t have one. Everything comes together in 1 easy step and then you have the most delicious watermelon mint splash drink you can imagine.

Watermelon Mint Splash
Ingredients
For the Simple Syrup:
- 1 cup water
- 1 cup sugar
For the Watermelon Mint Splash:
- 2 cups cubed watermelon (seeds and rind removed)
- 1 cup cold water
- juice from 1/2 a lemon
- 10 to 15 mint leaves
- 6 TBS simple syrup
Instructions
For the Simple Syrup:
- In a medium pot bring together 1 cup sugar and 1 cup water.
- Bring to a simmer, stirring regularly until all sugar is dissolved.
- Let cool.
- Save leftovers in the fridge for up to 2 weeks.
For the Watermelon Mint Splash.
- Place everything in your blender. Blend until smooth.
- Serve over ice.
