Beef Enchilada Soup

Soup that tastes like your favorite beef enchilada but so easily cooked in a slow cooker.

Ingredients

Beef Enchilada Soup

  • 1 lb ground beef
  • 1/2 yellow onion (chopped)
  • 1 14.5 oz can diced tomatoes
  • 1 10.5 oz can cream of chicken soup
  • 1 10 oz can enchilada sauce
  • 1 15 oz can black beans (drained)
  • 1 15 oz can corn (drained)
  • 1 TBS taco seasoning
  • 1 tsp salt and pepper (to taste)

Instructions

Beef Enchilada Soup

  • In a large skillet, brown the ground beef, drain if necessary
  • Add all the ingredients into the slow cooker, mix
  • Cook on low for 7 to 8 hours or high for 3 to 4
  • Serve topped with cheese, sour cream, and chips if desired
