Beef Enchilada Soup
Soup that tastes like your favorite beef enchilada but so easily cooked in a slow cooker.

Beef Enchilada Soup
- 1 lb ground beef
- 1/2 yellow onion (chopped)
- 1 14.5 oz can diced tomatoes
- 1 10.5 oz can cream of chicken soup
- 1 10 oz can enchilada sauce
- 1 15 oz can black beans (drained)
- 1 15 oz can corn (drained)
- 1 TBS taco seasoning
- 1 tsp salt and pepper (to taste)
Beef Enchilada Soup
In a large skillet, brown the ground beef, drain if necessary
Add all the ingredients into the slow cooker, mix
Cook on low for 7 to 8 hours or high for 3 to 4
Serve topped with cheese, sour cream, and chips if desired
