Equipment

Ingredients

  • 4 egg yolks
  • 3/4 cup sugar (divided)
  • 2 cups heavy cream (divided)
  • 1 cup whole milk
  • 1/4 cup cocoa powder (sifted)
  • 1/4 tsp salt
  • 4 oz semi sweet chocolate (chopped)
  • 1 tsp vanilla
  • 5 Cosmic Brownies (about 1 1/2 cups chopped)
  • 1/3 cup rainbow chocolate coated candy chips

Instructions

  • Add the egg yolks and 1/4 cup of the granulated sugar to a medium sized bowl and whisk them together for a couple of minutes until well combined. Set the eggs aside.
  • Add the remaining 1/2 cup of sugar, 1 cup of the heavy cream, milk, cocoa powder, and salt to a large sauce pan.
  • Heat the mixture over medium, stirring often until the mixture starts to bubble, around the edges, or lightly simmer.
  • Add in the chopped chocolate, and stir it into the mixture
  • Slowly pour 1/2 cup of the chocolate cream mixture into the egg yolks while whisking vigorously. Add another 1/2 cup of the chocolate cream mixture, slowly into the mixture until combined.
  • Pour another 1 cup of the chocolate cream mixture, 1/2 cup at a time, while whisking the whole time.
  • Pour the egg mixture back into the sauce pan and continue to heat for another few minutes until the mixture starts to thicken enough to coat the back of a spoon.
  • Remove the mixture from the heat and stir in the remaining 1 cup of cream, and the vanilla extract.
  • Pour the mixture through a fine mesh strainer into a large bowl.
  • Put the large bowl over another bowl of an ice bath and let it sit for about 10-15 minutes, stirring occasionally.
  • Cover the bowl and place it in the fridge for at least 2 hours, up to overnight until chilled.
  • Run the ice cream maker, and pour the chocolate cream mixture into the machine. Let it run according to manufactures instructions until it is a soft serve consistency(about 25-30 minutes).
  • Add in most of the brownie pieces and rainbow chocolate coated candy chips and let it run for another few minutes until they are mixed evenly throughout.
  • Transfer the ice cream into a 9x5 loaf pan, or other 1.5 quart pan and sprinkle with a few additional brownie pieces and candy.
  • Cover container with a lid or foil and place it in the freezer to freeze for at least 6 hours, up to overnight to freeze solid.
