You'll love this heavenly cosmic brownie ice cream, that is loaded with a luscious chocolate custard ice cream base, full of cosmic brownie pieces, and colorful cosmic chocolate sprinkles. This is a decadent dessert that is going to take you straight back to your childhood.
Add the egg yolks and 1/4 cup of the granulated sugar to a medium sized bowl and whisk them together for a couple of minutes until well combined. Set the eggs aside.
Add the remaining 1/2 cup of sugar, 1 cup of the heavy cream, milk, cocoa powder, and salt to a large sauce pan.
Heat the mixture over medium, stirring often until the mixture starts to bubble, around the edges, or lightly simmer.
Add in the chopped chocolate, and stir it into the mixture
Slowly pour 1/2 cup of the chocolate cream mixture into the egg yolks while whisking vigorously. Add another 1/2 cup of the chocolate cream mixture, slowly into the mixture until combined.
Pour another 1 cup of the chocolate cream mixture, 1/2 cup at a time, while whisking the whole time.
Pour the egg mixture back into the sauce pan and continue to heat for another few minutes until the mixture starts to thicken enough to coat the back of a spoon.
Remove the mixture from the heat and stir in the remaining 1 cup of cream, and the vanilla extract.
Pour the mixture through a fine mesh strainer into a large bowl.
Put the large bowl over another bowl of an ice bath and let it sit for about 10-15 minutes, stirring occasionally.
Cover the bowl and place it in the fridge for at least 2 hours, up to overnight until chilled.
Run the ice cream maker, and pour the chocolate cream mixture into the machine. Let it run according to manufactures instructions until it is a soft serve consistency(about 25-30 minutes).
Add in most of the brownie pieces and rainbow chocolate coated candy chips and let it run for another few minutes until they are mixed evenly throughout.
Transfer the ice cream into a 9x5 loaf pan, or other 1.5 quart pan and sprinkle with a few additional brownie pieces and candy.
Cover container with a lid or foil and place it in the freezer to freeze for at least 6 hours, up to overnight to freeze solid.
