Bacon Brussels Sprouts

These Bacon Brussels Sprouts will convince you that Brussels sprouts are actually delicious! Paired with the smoky, salty bacon, they are easily, and quickly transformed into a masterpiece. A perfect side dish for practically any dinner!

Ingredients

  • 1 pound Brussels sprouts (trimmed, and halved)
  • 4 strips thick cut bacon
  • 2 TBS olive oil
  • 1/2 large onion (chopped)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1 TBS balsamic glaze

Instructions

  • Cut a thin slice off the stalks of each of the Brussels sprouts. Remove any bruised outer leaves, and cut the sprouts in half.
  • Dice the bacon into small pieces.
  • Add the bacon to a large skillet and cook it over medium heat until crispy.
  • Remove the bacon from the pan with a slotted spoon, to a paper towel lined plate. Leaving the rest of the bacon grease in the pan.
  • Add the olive oil to the pan. Add the cut Brussels sprouts, onions, and salt and pepper to the pan and cook, stirring every couple of minutes until golden brown, and the Brussels sprouts are fork tender.** About 8 to 12 minutes.
  • Return the bacon bits to the pan, and cook for another minute. Taste and add more salt or pepper as needed.
  • Drizzle balsamic glaze over the top if desired, and serve hot.

Notes

**Leave the brussels sprouts in each position for a couple of minutes to let them get nice and crispy edges. Make sure you cook each piece inside down to get that side to crisp nicely.
