Churro Chex Mix

For the Chex Mix:
- 10 cups Chex Cereal (use a mix, or your favorite - I used all Rice Chex)
- 1 cup Mini Pretzels
- 1 cup Chopped Pecans
For the Cinnamon Sauce:
- 1 cup Unsalted Butter
- 1 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 2 TBS Ground Cinnamon
- 1/2 tsp Vanilla Extract
- 1/4 tsp Salt
For the Cinnamon Sugar Coating:
- 1/4 cup Brown Sugar
- 2 TBS Granulated Sugar
- 1 TBS Ground Cinnamon
For the Chex Mix:
Preheat the oven to 275 F. Line a large baking sheet with parchment paper, set it aside.
Add the Chex Cereal, pretzels, and pecans to a large bowl and stir them together.
For the Cinnamon Sauce:
Add the butter, brown sugar, granulated sugar, and cinnamon to a medium pot over medium heat. Continue to cook for about 4 to 5 minutes, until the sugars are dissolved, and the mixture starts to boil.
Pour the cinnamon mixture over the Chex mixture and gently mix to coat it all together.
Spread the Chex mixture onto the prepared sheet.
Bake for 45 minutes, stirring every 15 minutes.
Remove the pan from the oven, and let it cool at room temperature for 15 minutes.
For the Cinnamon Sugar Coating:
Stir the coating ingredients together in a small bowl.
Add the cereal back to the large bowl, and add the cinnamon sugar coating. Toss it together with a rubber spatula.
Enjoy warm, or let it cool completely to enjoy later.
