Hummus Sundried Tomato RollUps

Hummus sundried tomato wraps for a healthy, easy dinner on a too hot to cook day.

Ingredients

  • 4 cooked tortillas
  • 1 cup hummus
  • 36 to 40 spinach leaves (washed)
  • 1/2 to1 cup sundried tomatoes
  • 4 to 6 sprigs fresh basil (washed)
  • 4 to 6 mini orange peppers (cut into slivers)

Instructions

  • Lay each tortillas flat
  • Spread 1/4 of the hummus all over the top of a tortilla
  • Layer 3 to 10 spinach leaves over the hummus
  • Spread 1/4 of the sundried tomatoes over the spinach
  • Separate the basil leaves from the stem and spread over the tomatoes
  • Spread 1 to 1 1/4 pepper slivers over the basil
  • Roll the tortilla up tightly, tucking the food inside
  • Cut into 6 1" pieces
  • Serve
