Hummus Sundried Tomato RollUps
Hummus sundried tomato wraps for a healthy, easy dinner on a too hot to cook day.

- 4 cooked tortillas
- 1 cup hummus
- 36 to 40 spinach leaves (washed)
- 1/2 to1 cup sundried tomatoes
- 4 to 6 sprigs fresh basil (washed)
- 4 to 6 mini orange peppers (cut into slivers)
Lay each tortillas flat
Spread 1/4 of the hummus all over the top of a tortilla
Layer 3 to 10 spinach leaves over the hummus
Spread 1/4 of the sundried tomatoes over the spinach
Separate the basil leaves from the stem and spread over the tomatoes
Spread 1 to 1 1/4 pepper slivers over the basil
Roll the tortilla up tightly, tucking the food inside
Cut into 6 1" pieces
Serve
