Flourless Peanut Butter Cookies
Easy, gluten free peanut butter cookies - perfect for your peanut butter cookie cravings.
Servings: 18 cookies
- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla
- 1 large egg
- 1 tsp baking soda
- 1/2 tsp salt
Preheat your oven to 350 degrees Fahrenheit.
Cream together your peanut butter and sugars until light and smooth. About 2 minutes.
Add in your egg and vanilla and mix.
Add in your baking soda and salt and stir everything together.
Shape dough into 1 tablespoon to 1.5 tablespoon sized balls.
Flatten each ball with a criss cross pattern using your fork.
Bake for 8-9 minutes until edges are just set.
Let them cool on your baking sheet for about 10 minutes, then enjoy warm or transfer to a cooling rack.
