For the Chile Colorado Beef:
- 2 lbs beef stew meat
- 28 oz red enchilada sauce (divided)
- 7 oz diced green chiles
- 1 tsp beef bouillon
For the Burrito Assembly:
- 1 cup refried beans
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
Add the stew meat, about 2.5 cups of enchilada sauce, green chiles, and beef bouillon to the bottom of a slow cooker.
Cover the slow cooker with the lid and let it cook on low for 7 to 8 hours.
Shred the meat slightly after it's done cooking.
For the Burrito Assembly:
Preheat the oven to 400 degrees Fahrenheit. Grease a 9x13 baking dish with nonstick spray.
Spread a couple Tablespoons of refried beans onto the middle of a tortilla.
With a slotted spoon, scoop some meat out of the mixture and add it to the middle of the tortilla.
Wrap the ends toward each other, then roll the rest up to make a burrito. Place it seam side down into the prepared baking dish. Repeat with additional tortillas, beans, and meat.
Spread remaining enchilada sauce over the top of the burritos.
Sprinkle cheese evenly over the top of the burritos.
Bake the pan in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Serve hot.
