Barbecue Chicken Lettuce Wraps
Barbecue chicken lettuce wraps are easy to make and packed full of flavor, stuffed full of bbq chicken, corn, black beans, and bell peppers these are perfect for lunch or dinner!
- 3-4 large chicken breasts
- 1/2 cup bbq sauce
- salt and pepper
- 1 14 oz can black beans drained and rinsed
- 1 14 oz can corn drained and rinsed
- 1 large bell pepper diced
- 2 TBS cilantro chopped
- 1 head butter lettuce
Coat all of the chicken breasts in about 2 TBS of bbq sauce and sprinkle with salt and pepper.
Cook on your a grill over medium heat for about 10 minutes, flipping halfway until cooked throughout (or cook in a saute pan or in the oven) and internal temperature is 165 degrees.
Dice chicken into bite sized cubes. Coat chicken in a small bowl with remaining bbq sauce.
Spoon about 1 TBS black beans, 1 TBS corn into a lettuce leaf.
Spread 2-3 TBS of chicken on top.
Sprinkle with bell pepper pieces and cilantro and serve.
