We seem to have been on a bit of an Asian food kick, the last few days. And when I say kick that means we had homemade Asian food 3 times in about a week. That is a lot for us. Also, do you like how I say Asian food? Because sadly, I don’t know the difference of what food comes from what country, and I also don’t know if this would actually be made in an Asian county. So maybe its Asian American food. Either way, its pretty darn good.
Here is the first recipe of the bunch to come. Pineapple Fried Rice. So I definitely wouldn’t compare this recipe to a normal ham fried rice. But we did add ham to make it a little more substantial. This recipe just stands alone, its different. It is rice, and vegetables, but I think its a lot more rice and a lot less eggs than normal. But its good. So, just try it out. Plus (aren’t these pictures gorgeous?! — they only should make you want to make and eat this)
1 TBS sunflower oil
2 cups rice **
4 cups water

1 TBS sunflower oil
1 TBS garlic
1/4 tsp ginger
3 carrots, cut and sliced (1 cup)
3/4 cup onion, diced
1 cup peas
1 1/2 cups ham, chopped

4 eggs
4 TBS soy sauce
2 TBS apple cider vinegar
1 TBS sunflower oil

1 can pineapple, drained
1 TBS soy sauce
1 TBS apple cider vinegar
1. In a large pot heat 1 TBS oil over medium.
2. Once heated, add rice and brown for 6-8 minutes, stirring a few times.
3. Add the water and bring to a boil. Stir once. Reduce heat to simmer and cover. Cook rice according to length on package directions.
4. After rice is done cooking remove from heat and keep covered for 10 minutes. Then fluff with a fork.
5.Over medium high heat add 1 TBS oil to a large pan, once hot add carrots, onion, garlic and ginger.
6. Cook for about 12 minutes stirring occasionally. (Depending on how crunchy/soft you like your carrots)
7. Add peas and ham to mixture and cook for 1 minute. Set aside.
8. In the rice pot, add 1 TBS oil, soy sauce, and apple vinegar. Cook for about 5 minutes, stirring every minute.
10. Create a well in the middle of the rice.
9. Whisk the eggs in a separate bowl and add the eggs to the well and cook like scrambled eggs.
10. Mix the rice and eggs together.
11. Add the vegetables to the rice mixture.
12. In a hot pan over medium high heat, mix pineapple, soy sauce and apple cider vinegar.
13. Cook pineapple for about 10 minutes, stirring occasionally, until pineapple is hot and browning.
14. Top rice mixture with pineapple and additional soy sauce.
**I would recommend not using sticky rice, although it tastes fine, its much messier, so I think a long grained variety of rice would be best.
