Oven baked curly fries with “wow your mouth” seasonings and baked so no oil.
I love Arby’s. I usually get the same thing whenever we go to Arby’s, a regular beef and cheddar sandwich. And of course you can’t forget the curly fries. No matter how much I try to resist, if we are at Arby’s, I just can’t say no to the curly fries.
I have wanted to try curly fries for a while, and so I asked and got this awesome curly fry cutter for my birthday. And then I had to find a recipe base and I found one on Babble.com and last night we decided to give it a go. Success my friends.
The flavor of these curly fries tastes a LOT like Arby’s and they are baked in the oven, making them at least 10x healthier for you. Right? Actually, these have no oil and are much healthier for you than traditional curly fries. Check out the approx nutritional value from the recipe on babble (before I added a couple things).
If you are ever craving curly fries, this is the recipe for you. And if you don’t want to go out and buy a curly fry cutter then you can just cut them like regular straight french fries with a mandolin or a knife and just enjoy the delicious seasoning. YUM!
Oven Baked Curly Fries – Arby’s Copycat
Ingredients
- 3 large potatoes
- 2 tsp paprika
- 1.5 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp cayenne pepper
- 3 TBS flour
- 3 TBS egg
- 1.5 TBS milk
Equipment
- Large Mixing Bowl
Instructions
- Preheat oven to 450 degrees.
- Bring a medium sized pot of water to boil.
- Cut potatoes into curly fries using a curly fry cutter, or cut potatoes into regular fries. (You can peel the potatoes first if you want to)
- Put potatoes in boiling water and boil for 3 minutes.
- Rinse potatoes off in a colander with cold water.
- Dry potatoes with paper towels and set aside.
- Combine paprika, salt, garlic powder, onion powder, cayenne pepper and flour in a small bowl.
- Add in egg and milk and mix well.
- Pour fries into a large bowl and pour seasoning mixture in and mix well.
- Dump fries onto a baking sheet lined with parchment paper and spread around evenly (so they aren’t overlapping)
- Bake for 30-35 minutes, flipping a couple times through out until french fries are nice and crispy.
Enjoy these curly fries hot and fresh with ketchup or plain!

These were not like Arby’s fries at all! My potatoes didn’t fall apart in the boiling water. But once I got them in the oven, they never browned like the pictures and my oven is very on-point. Also, they had absolutely no flavor! Even if it was an issue with temperature, the flavor was just not there. I actually did extra seasonings because it seemed a bit light on the seasonings when I read the recipe. Pretty disappointed!
Jen says
I would not recommend boiling sweet potatoes at all… I tried five attempts… boiling at exactly 3, then 2, then 1 minute… sitting in hot water for 1 minute… then finally not boiling at all, which yielded the best result
Used egg replacement option of ground flaxseed and hot water mixture… 1TBS ground flax with 2 TBS hot water, then added milk… worked well
Aimee Berrett says
Good to know Jen! I have only tried this recipe with regular potatoes, not sweet potatoes!
Eileen says
We used a Vegetti and ended up with hash browns. Ha ha. Our fault. Now I know how to make hash browns!
Aimee Berrett says
Sorry that they ended up as hashed browns, haha! Hope the flavor was still good 😉

I’m from Australia and was wandering if this is an American recipe? So did you set the oven to 450° Fahrenheit or Celsius?
Aimee Berrett says
This is 450 fahrenheit, so it should be like 232 celsius
Patrick McSwain says
Most pizza ovens don’t go as high as 450C =D
Sarah says
I followed your directions but cut it into thirds which I figured would be two servings (also because otherwise I’d eat the whole batch myself). It worked well and I froze the other half of my third before baking stage so I could eat those later. Thank you
Rachel says
These were awesome! I just made the recipe, and it came out perfect! (I am a novice cook, so I was shocked.) I didn’t have a curly fry cutter, so I just had regular straight cuts. I’ll hopefully make these again!

My potatoes also fell apart while boiling. My water was already boiling but then it took a few minutes for the water to boil again once I added the potatoes-so I started the timer from the time they started boiling and left them in for 2 mins. This totaled about 5 minutes in the hot/boiling water. Maybe the instructions could be updated so people understand that they don’t have to bring the water back to boiling after the potatoes have been added. I currently have the bits and pieces in the oven. I am hoping it will turn out like a crispy potato hash so dinner can be salvaged. I look forward to trying it again but with modifications. 🙂
Aimee Berrett says
You’re right Kaye, you’re gonna want to just cook the potatoes in the water for 3 minutes total, not bringing the water back to boil if it stopped. Mine has stayed boiling, or at least simmering even when I added the potatoes. I’ll try to edit the instructions to make it more clear.
Christine says
Could you use for example sweet potatoes instead?
Aimee Berrett says
Christine, I think sweet potatoes should work, but the baking time might change a little. I’d just check them every few minutes and keep them baking till nice and crispy!
Leyla says
They didn’t become like arbys fries, they seemed like only boiled. Not very satisfactory
Aimee Berrett says
Sorry Leyla, maybe your oven temperature differs from mine, because mine got nice and crispy
Kelli says
My potatoes also fell apart. I used my spiralizer to cut the them. they were pretty thick to begin with so I’m not sure why they all broke. I wonder if you could get the same results by just baking for longer.
Aimee Berrett says
So sorry. I literally only boil them for 3 minutes. It shouldn’t be enough time for them to fall apart. They should only get a little bit soft. The best oven baked potatoes are always soaked in hot water first to get rid of the starch. You could try just using warm sink water instead of boiling them in a pot.
Sheryl says
These are far from being like Arby’s fries. Don’t waste your time or money. Very disappointed
Aimee Berrett says
Sorry you didn’t like them Sheryl. What were the issues you had with them?
Zach says
LOL so much money!
Nici says
Hi, what do you mean by “3 TBS egg”? as in 3 eggs? or 3 tablespoons of egg? Thanks.
Aimee Berrett says
Yep Nici, stir up an egg and measure out 3 tablespoons of the egg. Its about 1 large egg
Nici says
That’s great! Thanks for the clarification! 🙂

Oh my goodness, I am so craving this now. Thank you for a copycat recipe of Arby’s curly fries!!!

Just made some! I boiled the water first, then added the potatoes for 3 minutes. Maybe Linda had them in the water to begin with? I used the parchment for sure. Love that stuff! Used 1 egg instead of ‘3 TBS EGG’. Very good!!!
Linda lulu says
Has anyone tried this recipe? My potatoes fell apart when I boiled them. Then they stuck to the pan. Oh, what a disappointment to my kids and husband.
Aimee Berrett says
Linda, I’m sorry that the recipe didn’t turn out for you. I’ve seen a few posts on pinterest where people tried them and they turned out so I’m not sure what went wrong when you tried. Did you make sure to use parchment paper to prevent sticking? And did you use the curly fry cutter or cut them with something else, only boiling for 3 minutes shouldn’t cause then to fall apart unless maybe they were cut small? Once again, sorry you were disappointed.
Denise says
I’m about to try them now. My husband bought. Curly fry cutter at yard sale for 2.00. Gonna put it to work..love the recipe..I’m boiling my potatoes whole first, see how that works. Keep ya posted

I am such an Arby’s curly fry fan. I am so happy to have found this. Now I just need to go buy a curly fry cutter… darn.

They’ll taste the same if you cut straight fries, they just might not be as fun to eat! 😉
