Slow Cooker  Beef Gyros

These slow cooker beef gyros have the a tender and flavorful beef that is cooked in the slow cooker. The tender slow-cooked beef is wrapped in warm pita bread, and topped with fresh vegetables and tzatziki sauce. 

WHAT YOU'LL NEED:

For the Beef Gyro Meat: 1/4 cup olive oil 2 TBS fresh lemon juice 1 TBS minced garlic clove 1 tsp dried oregano 1 tsp salt 1/2 tsp black pepper 2-3 boneless beef chuck roast (cut into 2-3 inch pieces, or sliced) For the Gyros: 6 soft Greek style pitas 1 cup tzatziki sauce 1 cup chopped lettuce 1/2 cup sliced cherry tomatoes 1/2 cup sliced red onion 1/2 cup sliced English cucumber

You want a tender cut of meat that has large pieces of fat marbled throughout to break down while the meat is slow cooking. A chuck roast or beef shoulder are some of the best cuts for this. You can sear the beef pieces before adding them to the slow cooker to help enhance the flavor and texture of the meat, by sealing in the juices.
