Pasta Primavera

A delicious pasta with fresh spring vegetables for your dinner table tonight.

Ingredients

  • 1 bunch bunch of asparagus (washed and trimmed to 1 inch lengths)
  • 1 yellow squash (washed, sliced thin, and in half)
  • 1 large red tomato (diced)
  • 8 oz pasta (your favorite)
  • 2 to 4 cloves garlic (minced)
  • 2 Tbs olive oil
  • 1 to 2 Tbs Italian seasonings*
  • 1 tsp garlic salt
  • salt and pepper (to taste)
  • 12 large large shrimp (tails removed)
  • Parmesan cheese (freshly grated)

Instructions

  • In a large sauce pan bring water to boil for your pasta
  • Once boiling, add 1 tsp salt and pasta
  • Cook your pasta according to the directions on the package
  • Meanwhile, in a saute pan add your olive oil
  • Sprinkle your shrimp with Italian seasonings
  • Add the shrimp to your saute pan and cook throughout (about 3 minutes) turning once
  • Add your asparagus and yellow squash, saute for a few minutes
  • Add your minced garlic and a little more Italian seasoning
  • Once the pasta is cooked, drain, and add to the vegetables
  • Add your tomatoes last and let warm slightly
  • Serve sprinkled with fresh basil and freshly grated Parmesan cheese if desired
