Mandarin Spinach Pasta Salad

This mandarin spinach pasta salad is topped with an amazing homemade teriyaki salad dressing, it's quick, easy, healthy, and perfect to eat all summer long!

Ingredients

For the Teriyaki Dressing:

  • 1/3 cup teriyaki sauce
  • 1/3 cup rice wine vinegar
  • 1/3 cup olive oil
  • 2 TBS sesame oil
  • 2 TBS honey
  • 1 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/4 tsp salt (to taste)
  • 1/8 tsp black pepper (to taste)

For the Mandarin Spinach Pasta Salad:

  • 16 oz bow tie noodles
  • 4 cups fresh baby spinach
  • 1 cup diced red bell pepper
  • 15 oz mandarin oranges (drained)
  • 1/2 cup sliced almonds
  • 1/4 cup fresh cilantro (chopped)

Instructions

For the Teriyaki Dressing:

  • Combine all the ingredients for the teriyaki dressing in a small bowl. Stir together.
  • Cover and place in the fridge till needed.

For the Mandarin Spinach Pasta Salad:

  • Bring a large pot of water to boil. Add pasta to the pot and cook according to package directions.
  • Drain water from pasta and rinse under cold water. Set aside till needed.
  • While the pasta is cooking prepare the other ingredients.
  • In a large bowl, add the pasta, spinach, red pepper, mandarin oranges, sliced almonds and cilantro.
  • Toss all the ingredients together, then top with desired amount of dressing.
  • Serve immediately.
