Grinch Christmas Tree Cookies

Ingredients

For the Christmas Tree Sugar Cookies:

  • 1 cup unsalted butter (room temperature)
  • 2 cups granulated sugar
  • 2 TBS half and half
  • 1 tsp vanilla extract
  • 3 large eggs
  • 4 cups all purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • neon green gel food coloring

For the Snowy Glaze:

  • 1 cup powdered sugar
  • 1/2 tsp milk
  • 1/2 tsp vanilla extract

For the Candy Hearts:

  • 1 cup red candy melts

Instructions

For the Christmas Tree Sugar Cookies:

  • Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet (or two) with parchment paper or a silicone liner.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add in the half and half, vanilla, and eggs, and beat them into the butter until well combined.
  • Add in the flour, baking powder, and salt.
  • Add in some of the neon green food coloring. Mix it all together until you have a nice thick dough. (Add more food coloring as needed for your desired color)
  • Cover the dough and chill if for 1 hour in the fridge.
  • Lightly flour a surface and add half of the dough. Roll it out to be about 1/4 inch thick.
  • Use a Christmas tree cutter to cut out your cookies.
  • Bend the top of the cookie tree down toward the side to make it like a curl, like the tree in the story.
  • Place the cookies about an inch apart on the prepared baking sheet.
  • Bake the cookies for 7 to 9 minutes, until the cookies are just set and the edges start to turn light brown.
  • Let the cookies cool for 5 minutes on the baking sheet, then transfer them to a cooling rack to cool completely.

For the Snowy Glaze:

  • Add the powdered sugar, milk, and vanilla extract to a medium sized bowl and stir them together until you have a thick glaze. Add more milk as needed.
  • Dip the cookie tips into the glaze, or use a spoon to put some on each of the tips of the cookies. Let the glaze harden completely.
  • Add the candy melts to a medium sized bowl and melt them according to the package directions (or in 30 second increments until you can stir them smooth.)
  • Transfer the red candy to a zip top bag and snip off a tiny corner.
  • Pipe red candy hearts onto the middle of the trees.
  • Let the chocolate cool. Then serve the cookies!
