Slow Cooker Beef Gyros

These slow cooker beef gyros have the a tender and flavorful beef that is cooked in the slow cooker. The tender slow-cooked beef is wrapped in warm pita bread, and topped with fresh vegetables and tzatziki sauce.

Ingredients

For the Beef Gyro Meat:

  • 1/4 cup olive oil
  • 2 TBS fresh lemon juice
  • 1 TBS minced garlic clove
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2-3 boneless beef chuck roast (cut into 2-3 inch pieces, or sliced)

For the Gyros:

  • 6 soft Greek style pitas
  • 1 cup tzatziki sauce
  • 1 cup chopped lettuce
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup sliced red onion
  • 1/2 cup sliced English cucumber

Instructions

For the Beef Gyro Meat:

  • Add the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to a small bowl and stir them together.
  • Add the beef pieces to the bottom of a slow cooker and pour the sauce over the top. Toss the beef in the mixture to coat it evenly.
  • Cook the meat in the slow cooker for 6-7 hour, or until the meat is tender. Shred the meat into bite sized pieces.

For the Gyros:

  • Take a pita and top it with shredded beef gyro meet, your choice of toppings, and a dollop or two of tzatziki sauce. Enjoy.
