Slow Cooker Beef Gyros
These slow cooker beef gyros have the a tender and flavorful beef that is cooked in the slow cooker. The tender slow-cooked beef is wrapped in warm pita bread, and topped with fresh vegetables and tzatziki sauce.

For the Beef Gyro Meat:
- 1/4 cup olive oil
- 2 TBS fresh lemon juice
- 1 TBS minced garlic clove
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2-3 boneless beef chuck roast (cut into 2-3 inch pieces, or sliced)
For the Gyros:
- 6 soft Greek style pitas
- 1 cup tzatziki sauce
- 1 cup chopped lettuce
- 1/2 cup sliced cherry tomatoes
- 1/2 cup sliced red onion
- 1/2 cup sliced English cucumber
For the Beef Gyro Meat:
Add the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to a small bowl and stir them together.
Add the beef pieces to the bottom of a slow cooker and pour the sauce over the top. Toss the beef in the mixture to coat it evenly.
Cook the meat in the slow cooker for 6-7 hour, or until the meat is tender. Shred the meat into bite sized pieces.
