Butterscotch Bars

For the Butterscotch Bars:
- 2 cups old fashioned oats
- 1 1/4 cups all purpose flour
- 1/2 cup sweetened coconut flakes (optional)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsalted butter
- 1 cup brown sugar
- 3/4 cup butterscotch chips
- 1 egg
- 1/2 TBS vanilla extract
For the Butterscotch Glaze:
- 1/2 cup butterscotch chips
- 2 TBS unsalted butter
- 1 cup powdered sugar
- 2 TBS whole milk
For the Butterscotch Bars:
Preheat the oven to 350 degrees Fahrenheit. Line a 9x13 pan with aluminum foil. Lightly grease the foil.
In a medium bowl, whisk together the dry ingredients; oats, flour, coconut, baking soda, and salt. Then set the mixture aside. 2 cups old fashioned oats, 1 1/4 cups all purpose flour , 1/2 cup sweetened coconut flakes, 1/2 tsp baking soda, 1/4 tsp salt
Add the butter to a small sauce pan, and heat it over medium. Let the butter melt, stirring often as it melts. Then it will start to foam. Scrape the sides and bottom of the pan often and cook until the butter gets a nutty smell, and turns a golden amber color. 1 cup unsalted butter
Pour the melted butter in a large bowl, and add in the brown sugar and butterscotch chips. Whisk until the chips are melted. 1 cup brown sugar, 3/4 cup butterscotch chips
Add in the eggs, and vanilla extract and stir until just combined. 1 egg, 1/2 TBS vanilla extract
Slowly add the dry ingredients into the wet ingredients until you have a nice soft dough.
Add the batter into the prepared pan. Press the top dough evenly.
Bake the bars for 12 to 15 minutes, or until a toothpick can be inserted in the center and comes out clean.
Remove from the oven and let the bars cool while you make the glaze.
For the Butterscotch Glaze:
Add the butterscotch chip, and butter to a small sauce pan. Heat over low heat, stirring often, until they are both melted and creamy. 1/2 cup butterscotch chips, 2 TBS unsalted butter
Add in the powdered sugar and milk and whisk until you have a smooth glaze. 1 cup powdered sugar, 2 TBS whole milk
Pour the glaze over the top of the bars. Smooth it out over the top while still warm, all the way to the edges with a rubber spatula or frosting knife.
Let the bars sit until the bars are cooled.
Cut into slices and enjoy.
