Preheat the oven to 350 degrees Fahrenheit. Line a 9x13 pan with aluminum foil. Lightly grease the foil.
In a medium bowl, whisk together the dry ingredients; oats, flour, coconut, baking soda, and salt. Then set the mixture aside. 2 cups old fashioned oats, 1 1/4 cups all purpose flour , 1/2 cup sweetened coconut flakes, 1/2 tsp baking soda, 1/4 tsp salt
Add the butter to a small sauce pan, and heat it over medium. Let the butter melt, stirring often as it melts. Then it will start to foam. Scrape the sides and bottom of the pan often and cook until the butter gets a nutty smell, and turns a golden amber color. 1 cup unsalted butter
Pour the melted butter in a large bowl, and add in the brown sugar and butterscotch chips. Whisk until the chips are melted. 1 cup brown sugar, 3/4 cup butterscotch chips
Add in the eggs, and vanilla extract and stir until just combined. 1 egg, 1/2 TBS vanilla extract
Slowly add the dry ingredients into the wet ingredients until you have a nice soft dough.
Add the batter into the prepared pan. Press the top dough evenly.
Bake the bars for 12 to 15 minutes, or until a toothpick can be inserted in the center and comes out clean.
Remove from the oven and let the bars cool while you make the glaze.
