Servings: 4 servings
- 1 sweet potato (peeled and cubed into 1/2 cubes)
- 1 15 oz can black beans (drained)
- 8 corn tortillas
- 2 cups grated Colby jack cheese
- 1 bunch fresh cilantro (torn into bite sizes)
- salt and pepper to taste
- 1 Tbs butter
- 1/4 cup diced red onion
- 1 lime (cut into wedges)

Put your cubed sweet potato into a microwave proof bowl, cover, and cook for about 3 to 5 minutes until fork tender.
Sprinkle with salt and pepper and add butter, stir gently to melt.
Warm corn tortillas either on the stove top with a small frying pan sprayed with cooking oil for about 1 minute or in the microwave for about 20 seconds.
Put all other ingredients in serving bowls and place on table.
On your plate layer 2 corn tortillas (1 doesn’t seem to be strong enough to contain everything), sweet potatoes, black beans, red onions, grated cheese, and cilantro according to amounts you like.
Squeeze lime juice over the top of everything.
Top with either sriracha or other hot sauce according to your taste.
