Preheat oven to 350 degrees
In a large bowl cream together the shortening, butter, peanut butter, and sugars
Add 1 egg at a time, mixing in between
Stir in the vanilla extract
In a medium bowl, combine the flour, salt, baking powder, and baking soda
Add to the wet ingredients and stir together, scraping down the sides as needed
Roll into 1 1/2 inch diameter balls, place on cookie sheet, flatten with crisscross fork markings
Bake for 9 minutes
Remove from oven and let cool on cookie sheet 5 minutes
Remove to cooling rack to finish cooling
Frost on the underside each cookie with peanut buttercream frosting
Add 1 tsp of jelly to one cookie, top with another cookie
Eat peanut butter and jelly cookies
