For the Buttercream Frosting:

  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 2 TBS whole milk
  • red, white, and blue sprinkles

Instructions

For the Red White and Blue Cake

  • Preheat the oven to 350 degrees.
  • Spray a 9inch cake pan with nonstick spray.
  • In a large mixing bowl, cream together Horizon Organic unsalted butter and sugar until light and creamy. About 3-4 minutes.
  • Add in vanilla extract, almond extract, Horizon Organic Cultured Sour Cream, and Horizon Organic Whole Milk and stir until fully combined.
  • Add in egg whites and mix until just combined. Scrape down sides of the bowl to make sure everything is fully incorporated.
  • In another medium bowl, combine flour, baking powder, and salt.
  • Add dry ingredients in with the wet ingredients  and mix until well combined.
  • Separate the batter into 3 bowls evenly.
  • Add red food coloring to one bowl, blue food coloring to one bowl, and leave one bowl white. Add enough food coloring till the red and blue colors are a nice bright reddish pink and blue.
  • Scoop large spoonfuls of each batter into the prepared baking pan, layering them on top of one another.
  • Bake for 32-38 minutes until an inserted toothpick comes out clean.
  • Allow to cool completely.

For the Buttercream Frosting:

  • Cream the Horizon Organic unsalted butter until smooth.
  • Add in the powdered sugar and mix until smooth.
  • Add in the vanilla extract and Horizon Organic Whole Milk and mix until the frosting is the right consistency.
  • Add in a tablespoon or two more of powdered sugar as needed, or a tsp or more of milk if needed.

For Assembling the Cake:

  • When the cake is cooled, even the top out as needed with a knife to make it flat.
  • Spread a crumb coat of frosting over the top of the cake and place in the fridge for 20 minutes to harden if needed.
  • Spread additional frosting on the sides and top of the cake to cover completely.
  • Sprinkle top with sprinkles if desired.
  • Serve immediately. Or store covered at room temperature for up to 5 days.
