Bacon Pea Salad

- 2 pounds frozen peas (thawed)
- 1/2 cup diced red onion
- 1 cup cubed cheddar cheese
- 8 slices bacon (cooked)
For the Creamy Dressing:
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 TBS apple cider vinegar
- 1 tsp granulated sugar (to taste)
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)
Rinse the peas off in cold water and let them thaw. Blot them dry with paper towels.
Crumble up, and cut the bacon into small pieces.
Add the peas, red onion, cheddar cheese, and bacon to a large bowl.
For the Creamy Dressing:
In another small bowl add the sour cream, mayonnaise, vinegar, sugar, salt, and pepper and stir them all together until combined.
Pour the dressing over the top of the pea mixture and toss it all together to evenly coat.
Cover the salad and place it in the fridge for 2 to 3 hours to let the flavors meddle.
Toss the salad again when ready to serve and enjoy.
