Chicken Curry Soup
- 2 TBS olive oil
- 1 yellow onion (diced)
- 2 carrots (diced)
- 1 1/2 TBS garlic (minced)
- 1 tomato (diced)
- 1 TBS white sugar
- 1 TBS ground coriander
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp turmeric
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/8 tsp red cayenne pepper
- 2 chicken breasts (cooked, shredded)
- 1 bay leaf
- 6 cups chicken broth
- 1/3 cup heavy cream
Optional Toppings:
- sliced shallots
- fresh thai basil
- fresh cilantro
- chili oil
- fresh squeezed lime juice
Chicken Curry Soup
In a large pot, heat over medium high and add the olive oil. Add in the onions and carrots and sauté until tender, about 10 to 15 minutes. 2 TBS olive oil, 1 yellow onion, 2 carrots
Add the minced garlic, and sauté 1 additional minute. 1 1/2 TBS garlic
Add the diced tomatoes and the spices, sauté for 2 additional minutes. 1 tomato, 1 TBS white sugar, 1 TBS ground coriander, 2 tsp cumin, 2 tsp paprika, 2 tsp turmeric, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp ground ginger , 1/4 tsp ground cloves, 1/8 tsp red cayenne pepper
Stir in the shredded chicken, and add the bay leaf on top. 2 chicken breasts, 1 bay leaf
Add the chicken broth, simmer for 20 additional minutes 6 cups chicken broth
Remove from heat and stir in the heavy cream. 1/3 cup heavy cream
Serve with your favorite toppings, and with a side of naan bread or over rice. sliced shallots, fresh thai basil , fresh cilantro , chili oil , fresh squeezed lime juice
- Add Potatoes: To make the soup heartier, add about 2 large potatoes, diced. Add the potato after you add the garlic and let it cook for a couple minutes, then add the chicken and chicken broth and let the potatoes cook as the broth simmers.
- Add Noodles or Rice: Cook Noodles or Rice according to their package directions in another pot (sorry, it will add another dish) to give the dish a little more substance. I recommend adding about 2-3 cups of cooked rice, or about 2-3 cups cooked noodles. I like rice noodles, or Chines egg noodles.
- Topping Ideas: Soup is extra delicious with toppings. Try sliced shallots, chili oil, thai basil, fresh cilantro, or fresh squeezed lime.
- Customize: Try adding bell peppers, zucchini, or squash for extra veggies. Fresh spinach is a great addition too (but only add that the last 2 minutes of cooking.
