Flourless Peanut Butter Chocolate Chip Cookies
These flourless peanut butter chocolate chip cookies are a naturally gluten free cookie, they're soft, and chewy, and packed with so much peanut butter flavor and lots of chocolate chips!

- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla
- 1 large egg
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips (+ more for topping if desired)
Preheat the oven to 350 degrees Fahrenheit.
Cream together the peanut butter and sugars until light and smooth. About 2 minutes.
Add in the egg and vanilla and mix.
Add in the baking soda and salt and stir everything together.
Add in the chocolate chips, and fold them evenly into the dough.
Shape the dough into 1 tablespoon to 1.5 tablespoon sized balls. Roll them into smooth balls.
Top each cookie ball with 3 or 4 chocolate chips if desired.
Bake for 8-9 minutes, until edges are just set.
Let the cookies cool on your baking sheet for about 10 minutes, then enjoy warm or transfer to a cooling rack. (I like to add even more chocolate chips to the top when I remove them from the oven, as needed to make them pretty)
