Hot Fudge Sauce

- 6 oz high quality chocolate (divided)
- 2/3 cup heavy cream
- 1/3 cup corn syrup
- 1/3 cup packed brown sugar (sifted after measuring)
- 1/4 cup cocoa powder (sifted after measuring)
- 1/4 tsp salt
- 2 TBS unsalted butter
- 1 tsp vanilla extract
Add half the chocolate chips, heavy cream, corn syrup, brown sugar, cocoa powder, and salt to a medium heavy duty sauce pan over medium high heat. Bring the mixture to a slow boil, stirring occasionally, until the chocolate is melted.
Lower the heat to medium low and let the mixture continue to boil for 5 minutes, stirring regularly.
Remove the pan from the heat and stir in the remaining chocolate, butter and vanilla. Stir until the chocolate is smooth, and the mixture is totally melted.
Let the mixture cool for about 10 minutes in the pan, then transfer it to a jar to cool to room temperature before covering and storing in the refrigerator.
