Italian Turkey Orzo Soup
This Italian turkey orzo soup is easy, hearty, and so delicious. It's loaded with tender vegetables, chicken broth, leftover turkey, and orzo noodles, and its packed full of flavor. It's a perfect way to use up leftover turkey or chicken meat.

- 2 TBS butter
- 1/2 cup chopped yellow onion
- 1/2 cup chopped mushroom
- 1/4 cup chopped asparagus
- 2/3 small zucchini (peeled and chopped)
- 3 cups chicken stock (or turkey stock)
- 14 oz Italian style stewed tomatoes
- 1 TBS Italian seasonings (to taste)
- 1/2 tsp sea salt (to taste)
- 1/4 tsp black pepper (to taste)
- 2 cups chopped cooked turkey or chicken
- 1/2 cup uncooked orzo
In a large pot, melt the butter over medium high heat.
Add in all the vegetables. Saute for 5 to 7 minutes, until the vegetables start to soften.
Add the chicken stock, stewed tomatoes, Italian seasonings, salt, and pepper. Simmer for 2 to 3 minutes.
Then add in the chicken. Simmer for about 10 minutes.
Add in the orzo and cook for about 15 mintues, until the orzo is cooked through. Stir every couple minutes, scraping the bottom to keep the orzo or any vegetables from sticking to the bottom of the pan.
