One Pot Lemon Chicken Pasta

- 1 TBS olive oil
- 2 cloves garlic (minced)
- 1 1/2 cups water
- 2 cups Rotini Pasta
- 1-2 Grilled Chicken Breast (sliced)
- 3/4 cup cream
- 2 TBS lemon juice
- zest of 1 lemon
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1 TBS snipped rosemary
- 1/3 cup freshly grated Parmesan cheese
In a medium saucepan add 1 TBS olive oil over medium heat. Add in minced garlic cloves, and sauté in the oil for 1-2 minutes, or until golden and tender.
Add in the water, and pasta noodles, and cook until the pasta is al dente, about 8-9 minutes.
Add in the chicken, heavy cream, lemon juice, lemon zest, salt, pepper, and rosemary.
To the saucepan; add cream, lemon juice and zest, chicken strips, salt & pepper, and rosemary. Stir it all together.
Continue to cook the mixture until the chicken is hot throughout.
Stir in the Parmesan cheese
Serve warm. Garnish individual bowls with more cheese, fresh rosemary, or lemon zest if desired.
