- 3 cups crisp rice cereal
- 2 cups quick oats
- 2/3 cup light brown sugar (packed)
- 2/3 cup honey
- 2/3 cup peanut butter
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup mini chocolate chips
Line a 9x13in pan with parchment paper. Set aside.
Add the rice cereal and oats to a large bowl and set aside.
Add the brown sugar, and honey to a small sauce pan. Heat over medium heat, stirring frequently until they are combined and the sugar has dissolved and melted.

Pour the peanut butter honey mixture over the cereal mixture and stir to fully coat.
Pour the mixture into the prepared baking pan and gently press the cereal evenly to fill the pan.
Allow the granola bars to cool for about 10 minutes. Then sprinkle the mini chocolate chips over the top of the bars, pressing them lightly into the top.
