- 16 oz sugar cookie dough (like Pillsbury)
For the Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup butter (1 stick, softened)
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
For the Rainbow Fruit Topping:
- 1/2 cup sliced strawberries
- 11 oz mandarin oranges (drained)
- 1/2 cup sliced pineapple
- 2 kiwi (peeled and sliced)
- 1/4 cup blueberries
- 1/4 cup purple grapes
Preheat the oven to 350 degrees.
Line a large baking sheet with parchment paper or silicone liner.
Spread out cookie dough, and roll and shape into a rainbow shape. About 1/2 inch thick.
Bake the cookie in the preheated oven for 10-14 minutes until the edges are lightly browned and the cookie looks barely set.
Let the cookie cool completely to room temperature.
For the Cream Cheese Frosting:
Put your cream cheese in a large mixing bowl and beat over medium speed until smooth.
Add in the butter and stir till smooth.
Add in the powdered sugar and vanilla extract and continue beating till the frosting is smooth and fluffy.
Spread cream cheese frosting all over the top of the cooled rainbow cookie.
For the Rainbow Fruit Topping:
Add the prepared fruit over the top of the rainbow in a rainbow pattern, red, orange, yellow, green, blue, and purple.
Serve immediately, or chill for 2-4 hours before serving.
Slice into long and thin pieces so each piece gets some of each of the fruits.
