Small Batch Funfetti Cupcakes

These funfetti cupcakes are moist, and delicious vanilla cupcakes, loaded with sprinkles and topped with a buttercream icing. The recipe makes just a small batch, 4 cupcakes for when you need something sweet, without a lot of extra.

Equipment

Ingredients

  • 3 TBS granulated sugar
  • 2 TBS unsalted butter (softened)
  • 1 egg white
  • 2 TBS milk
  • 1/4 tsp vanilla extract
  • 6 TBS all purpose flour
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1 TBS jimmie sprinkles

For the Funfetti Frosting:

  • 2 TBS unsalted butter (softened)
  • 1/2-3/4 cup powdered sugar
  • 1 TBS heavy cream
  • 1/4 tsp vanilla extract
  • 1 TBS jimmie sprinkles (plus more for decorating)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a muffin pan with 4 paper liners.
  • In a medium sized bowl whisk together the sugar and butter until well combined.
  • Add in the egg white, milk, and vanilla extract and stir until just combined.
  • Sprinkle in the flour, baking powder, salt and sprinkles and stir it together until just combined.
  • Scoop the batter evenly into the prepared cupcake liners.
  • Bake the cupcakes for 15-20 minutes, or until a toothpick comes out clean.
  • Cool completely before frosting.

For the Funfetti Frosting:

  • Add the butter to a small bowl and beat it until it is smooth.
  • Add in the powdered sugar, cream, and vanilla extract and beat together for a couple of minutes until light and fluffy. Add a little bit more cream or powdered sugar as needed for the correct consistency.
  • Fold in the sprinkles.
  • Scoop the frosting into a piping bag with a piping tip, and pipe the frosting onto the cupcakes, or spread it on with a knife.
  • Spread additional sprinkles evenly over the top of the cupcakes.
