Grilled Peach Salsa

Grilled Peach Salsa is a sweet salsa that is perfect with chips, tacos, or whatever you love salsa on. Grilling the peaches brings out even more sweetness and flavor.

Ingredients

Grilled Peach Salsa

  • 2 TBS olive oil (divided)
  • 2 large peaches (halved and pitted)
  • 2 cloves garlic
  • 1/2 jalapeno pepper (seeds removed)
  • 2 medium Roma tomatoes (seeds removed)
  • 1/2 lemon (squeezed)
  • 1/4 cup fresh basil (torn)
  • 1/2 tsp salt (to taste)

Instructions

Grilled Peach Salsa

  • Heat grill - indoor or outdoor
  • Spray peaches with 1 olive oil and cook inside down for about 6 minutes, until peaches are tender - let cool
  • Cut tomatoes in halve lengthwise and remove seeds - let drain in a strainer for 5 minutes
  • Cut tomatoes into 1/4 to 1/2 inch size pieces
  • Combine tomatoes, jalapeno pepper, garlic, lemon juice, and salt in a medium sized bowl
  • Cut cooled peaches into 1/4 to 1/2 inch size pieces
  • Gently toss in peaches and basil with additional 1 TBS olive oil in with the tomatoes
  • Serve
