Cinnamon Candied Pecans

These cinnamon candied pecans are simple to make; lots of cinnamon flavor with a great crunch.

Ingredients

  • 4 cups whole pecans (shelled)
  • 1 egg white
  • 1/2 cup brown sugar
  • 1 TBS cinnamon
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees
  • Place parchment paper down on a large cookie sheet, spray with a non-stick spray
  • Beat egg white until stiff
  • Beat in brown sugar, cinnamon, and vanilla until all mixed in
  • Fold in pecans with a rubber spatula, continue to mix until all pecans are coated
  • Spread flat onto cookie sheet
  • Bake for 15 to 20 minutes, stirring halfway through
  • Cool, store in an airtight container
