Chicken, Berry, and Almond Salad

This chicken berry salad is so refreshing and delicious. It's perfect for a light lunch, or dinner, all spring and summer long!

Equipment

  • Large Mixing Bowl

Ingredients

  • 3 cups spring mix lettuce
  • 3 cups fresh baby spinach
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 15 oz can mandarin oranges (drained)
  • 1/2 cup sliced almonds
  • 2 grilled chicken breast (sliced)
  • poppyseed dressing

Instructions

  • Add the spring mix, spinach, strawberries, blueberries, mandarin oranges and grilled chicken to a large bowl. Stir them together.
  • Pour the salad dressing over the top, and toss it into the salad to coat everything.
  • Serve immediately.
